Not to just IMMEDIATELY jump to Despites defence or anything, but I did the exact same thing in my first game of mafia, where I was a completely innocent townie just trying to get the ball rolling (The result being me lynched day two).

For your first ever video, that was really good. You seemed quite natural to me, and I was entertained throughout the entire video.
I once did a Let's Try for The Realms Shattered, and it was so god damn awful and akward, I removed it with shame about three days later, and I felt quite embarrassed about the whole process (waited until everyone left the house and everything) Trust me, yours is no way near the level of terrible mine was at.

I'm not sure what the heck is going on with the crates on that roof
Just ignore them. The crates aren't at all visible in game. If you set the roofs to "above player" in the editor, it allows the player to walk behind houses, and not just around them. Then you use the crates to prevent the player from going where he shouldn't. It's quite a good idea that Corfaisus uses, you can even hide chests and other things behind them! When it comes to mapping, I know my shit.

It takes a little while to find your groove, and everyone maps differently, but, you can learn by observing! I wouldn’t be worried, I used to have the exact same trouble when I was new to the program. I had difficulty figuring out what was what. The only way I could learn was by looking at what others had done (there's nothing wrong with it). Welcome to RMN, observe and you'll naturally pick up tips. Practice makes perfect too, you don’t have to jump right into anything; learn what each piece of a chipset does, as everything has it's use.

Is there anyway to lose or the red bandana (or colour it black at the very least)? It just doesn't fit with the suit imo.

Turning every dungeon into a challenge
Oh, I see now. But I don’t think random battles are that unfair if the time limit allows players to be caught in them. Unless it’s in a game where the “Escape” command only has a 2% chance of working. Everytime there’s a countdown in a commercial RPG I swear there’s always been random encounters, and they always make me shit a brick, but in a good way…somehow.
Also, will there be multiple rewards for different times, or any consolation prizes? Y’know, a free phoenix down and thanks for trying. Or here’s 50 Gil, buy yourself something pretty.
What about the NPC hinting at what the player might receive? I‘m not talking about “YOU WILL GET HOLY SWORD” but you could be a bit cryptic so they don’t necessarily know exactly what it is, or know who it is for, yet they can still decide whether they want to go for it; or is that just rubbish and I’m making this too complex for what you were aiming for? Probably the latter.

Seems like a fine idea to me, if it's optional then there's no way anyone can complain! You might have some issues with balancing the game, unless you completely turn off EXP/Gold/Items on the second run through of the dungeon.
...Well, not so much Gold and Items as they can be part of the reward, but certainly EXP (especially if you have to fight the boss again) as some players may choose to do every single dungeon, and some may choose to do none at all.
